Sprout and Sausage Orzo

I don’t like sprouts but I loved this dish. If, like me, you are anti sprouts, give them another try with this dish that can be made within 20 minutes!



Ingredients

250g dry orzo pasta

2 tablespoons oil of choice

12-15 thinly sliced Brussels sprouts

1 shallot, thinly sliced

6 sausages

Chicken or vegetable stock

2 tablespoons cream cheese


Method

Cut the sausages into equal chunks, roughly 3-4cm wide. Warm a pan on the hob with the oil and add the sausage in, after a minute or so add the sprouts and shallot in too and cook until the sausage starts to brown. If you want your sprouts to be thoroughly cooked with no crunch, consider part boiling before adding to the pan.


Add the dried orzo to the pan along with enough stock to cover the pasta. You want enough water to avoid boiling but not so much that you get stodgy pasta at the end!


Once the orzo has shown signs of expanding, give it a try to test if it is done. If so, add the two tablespoons of cream cheese and stir well.
